1 lb ground pork  

1/4 cup brandy  

1 medium onion, chopped  

2 cloves garlic, minced  

1 bay leaf 1 teaspoon dried thyme  

1/2 teaspoon dried sage  

1/2 teaspoon dried marjoram  

1/2 teaspoon dried rosemary  

1/2 teaspoon black pepper  

1/4 teaspoon nutmeg  

1/4 teaspoon ground cloves  

1/4 teaspoon allspice  

1/2 cup white mushrooms, chopped  

1/2 cup heavy cream  

1/4 cup butter  


1. In a large skillet, heat the butter over medium-high heat. Add the onion, garlic, bay leaf, thyme, sage, marjoram, rosemary, pepper, nutmeg, cloves, and allspice. Cook for about 5 minutes, often stirring until the onion is softened.  

2. Add the ground pork and cook for about 7 minutes, occasionally stirring, until the pork is cooked through.  

3. Add the brandy and mushrooms. Bring the mixture to a simmer, then reduce the heat and simmer for about 15 minutes, stirring occasionally.  

4. Add the heavy cream and stir to combine. Simmer for about 5 minutes, occasionally stirring, until the sauce has thickened.  

5. Remove the bay leaf. Transfer the mixture to a food processor and pulse until the desired consistency is reached.  

6. Serve warm or chilled with crackers or toast.
